University Business Administrator's

With economic hardship touching so many in our community, the staff of the University Business Administrator’s Program decided their annual holiday service project should be a food drive for the Emergency Care Help Organization (ECHO). They divided their unit into three teams headed by supervisors Phyllis Henderson, Grady Enlow and Angela Gaskins and began collecting food.

The challenge was simple. Each team had to assemble as many food bags as possible and each bag had to contain enough food to sustain a family of four for three days. The two losing teams would bake cookies for the winners. With visions of homemade cookies dancing in their heads, the three teams began the food drive.

The donations were tallied during the morning of the UBA Christmas Breakfast and although it was a tough race, Phyllis Henderson and her group provided the highest number of completed bags. Thanks to the efforts of all three teams, ECHO was able to provide food bags to 70 additional families.

In keeping with the spirit of the holidays, Grady Enlow and Angela Gaskins not only baked homemade cookies, they also donned reindeer antlers as they delivered them to the winning UBA sites on campus.
